Epic Cinderella carriage pie - taking pie to new heights, literally

Happy Monday! It's time for another ins-pie-ring post shining a spotlight on another epic pie and baker... And this week's post is indeed epic!

Technique-wise, Christine McConnell's Cinderella Carriage pie currently tops the list of my modern individual pie inspirations. Outside of medieval pies for royalty, I haven't seen anything like this. Using a support in the oven to help create a three dimensional top crust is super clever, and I love the end result. What do you think?
